Zappa Food Truck is a husband-and-wife-owned Polish street-food truck serving bold, made-to-order flavors throughout New Jersey.
Our signature dish is the zapiekanka—Poland’s iconic open-faced baguette, baked with mushrooms, onions, and cheese. We shortened the name to zappa, which also inspired the name Zappa Food Truck.
What’s a zappa?
A zappa starts with a freshly baked baguette, sliced lengthwise and topped with a savory mushroom-onion spread and mozzarella. It’s baked until hot, melty, and crisp, then finished with Polish tomato sauce and creamy garlic sauce.
Our classic zappa is the foundation for several globally inspired variations, including Polish, Italian, Swedish, and Mexican—each finished with fresh toppings and flavors that reflect its namesake.
Made with Purpose
Everything we serve is prepared with care and made to order. We import key ingredients—including Polish ketchup, mustard, mayonnaise, and pickles—to recreate the flavors we grew up with.
Our kielbasa is made especially for us by a local Polish butcher using a traditional recipe. Our bread is baked fresh daily by a local bakery, and we source fresh herbs and produce locally whenever possible.
You won’t find a fryer or microwave aboard our truck. We focus on freshly prepared, oven-baked food that lets the ingredients speak for themselves.
From Poland to New Jersey
Zapiekanka became popular in Poland during the 1970s. Made with simple, affordable ingredients, it quickly grew into a beloved street-food staple—Poland’s answer to pizza and a favorite for late-night cravings.
Today, zapiekanka remains a cult classic, with locals passionately debating which city—and which street stand—makes it best. At Zappa Food Truck, we’re proud to carry that tradition forward with our own New Jersey twist.
Meet Piotr & Veronika
Behind Zappa Food Truck are Piotr and Veronika, a husband-and-wife team with deep Polish roots.
Piotr, our chef, grew up in Poznań during the height of the zapiekanka craze. Some of his best memories involve lining up with friends at Zielona Budka for a hot zapiekanka after school or a night out. He still insists that Poznań makes the best zapiekanki in Poland—and he’s always ready to defend that claim.
Veronika was born and raised in New Jersey by Polish parents. She brings the hospitality, community spirit, and love of Polish culture that make Zappa Food Truck more than just a place to grab a meal.
Together, they’ve been rolling through New Jersey since 2021, sharing Polish flavor one crispy, cheesy zappa at a time.
Sustainability
Our truck uses solar power, and we serve our food in biodegradable, environmentally friendly packaging with compostable utensils.
